<java.version> is not referenced in the Maven documentation. It is a Spring Boot specificity. What you can do is in your ide and dedvelopment cycle use the -target/-bootclasspath trick to get faster compiler and better warnings, but IT and release builds then should be done with the target version.

Btw, the reason that you're having trouble is that the java compiler recognizes two version flags. There is -source 1.5, which assumes java 1.5 level source code, and -target 1.5, which will emit java 1.5 compatible class files.

On CentOS/Oracle Linux and a Java 6 compiled class I get "compiled Java class data, version 50.0 (Java 1.6)" but when I run it on a class compiled with Java 7 I just get the generic version "compiled Java class data, version 51.0" –
